I hadn’t planned to make a big to-do this year, but turns out, the hubs has a surprise up his sleeve! I’m so excited I can hardly stand it! The man doesn’t celebrate much, but when he does, it is always, always worth the wait.
I am getting pretty jazzed about pomegranates lately, and this recipe is a wonderfully exciting way to highlight the little buggers. It’s a party in your mouth. Tart, tangy, yet a tiny bit sweet. The black rice adds a nice chew, while the pomegranate seeds add some crisp and the squash some contrasting softness. The ingredients do all the heavy lifting here…there is little mingling, melding, blending, etc. You can taste each ingredient individually, while at the same time they all come together to create something really special. Each bite tastes a bit different, depending on what landed on the fork. Keeps you on your toes. There is a whole lot going on with this recipe, trust me. And, to top it all off, it makes a beautiful presentation. A real crowd pleaser all around!
